Coorg Bold Black Pepper

by Yedamakky Plantations

Black pepper was one of the earliest commodities to be traded in the world. Black pepper is also termed Black Gold and was used as Currency in the Middle Ages. Coorg Pepper is considered to be the one of world’s best since ancient times. The Portuguese, Arabs & Greeks had landed on the Malabar Coast to trade this Black Gold, which is currently a little over an hour’s drive from Yedamakky Plantation.

“Coorg Black Pepper” by Yedamakky Plantations is a Single Origin, Unprocessed and Sourced from Yedamakky Plantations that is named after a sleepy village called Yedamakky in Coorg District & nearby plantations of the village. Farmers at the Yedamakky Plantations & village harvest pepper vines in the month of Jan & Feb.

Ripped peppercorns are handpicked from the pepper vines and dried until it’s turned black. The dried peppercorns are then manually cleaned & packed by removing all dried husk & now the “King of Spices” is ready to be used in our Kitchen.

Since the entire process in manual, you may find small pieces of peppercorn outer husk that shows the rawness & purity of the produce in the best of its natural form.

Coorg White Pepper

by Yedamakky Plantations

Fully ripped red pepper berries are soaked in a drum filled with water drawn from spring water pond at Yedamakky and kept for about a week until it’s fermented and the flesh of the peppercorn is softened and decomposes. The water is then drained from the drum and the fermented peppercorns are gently rubbed until the outer skin is pealed off. The inner seed is then dried in the sun till the pepper corns are hardened just right.

Cardamom

Cardamom is an expensive spice, second only to saffron. It is often adulterated and there are many inferior substitutes from cardamom-related plants, such as Siam cardamom, Nepal cardamom and winged Java cardamom.

Indian cardamom is known in two main varieties: Malabar cardamom and Mysore cardamom. The Mysore variety contains higher levels of cineol and limonene and hence is more aromatic.

We at Yedamakky Plantations ethically source the best quality Mysore Cardamom & Malabar Cardamom directly from farmers. Crop is harvested at the farm which is then is washed in water & hand cleaned. The cardamom is then sent for curing process which is reducing the moisture of the harvested capsules to less than 15% through indirect heating process (traditional steaming method is used). This ensures the Cardamom capsule retains the green colour & the aroma.

Our team of experts then select the highest graded cardamom and bring them to Yedamakky Plantations. These capsules are then stored in an air tight reusable containers to maintain the freshness & aroma of the cardamom capsules.

Malabar Cardamom is sourced directly from farms in Idduki district of Kerala and the Mysore Cardamom is sourced from the farms in Coorg
